Mixed Greens with Apple, Cheddar and Honey Mustard Dressing
should just serve 12 people
You can either buy a bag of mixed greens, pick a pre-mixed bunch or buy the different kinds individually and mix them yourself. I prefer the latter as it allows me to pick and choose flavours I like. If I'm buying individually I get the following:
- 4 Endives - with the outer leaves taken off and the hearts unused
- 1 Radicchio - chopped into bite-sized pieces
- 2 head of leaf lettuce - I like to get one green and one red - just for variety
- 3 bunches of arugula - wash very well and cut into bite-sized pieces - I love arugula - it's not nuts but it has a bit of a nutty bite that goes really well with the apples
- Baby spinach - a couple of handfuls
- 8 small or 5 large apples - sliced (I used Macintosh apples)
and the dressing:
- whole grain Dijon mustard (3tbsp)
- the juice of at least one lemon (try one and if the dressing is too thick add some more)
- 225ml of olive oil
- salt and fresh ground peper
Directions:
- mix all the dressing ingredients together
- arrange the greens nicely on people's plates
- slice the apples and put them on the greens - a couple of slices per plate
- pour the dressing on the greens
- grate (a nice fine grate is good) cheddar over top of it all
- serve immediately or the apples will turn brown
